An extra % shows up after the date variable
An extra % shows up on the certificate I've generated, but only on the date variable. I've checked my word document and it seems correct with a % at either end of the variable. i.e %date%. Any ideas

There are only two places it can come from - either the template or the variable value. If you checked the template, and it does not contain an extra % character, then it's added whenever you're assigning the value to the variable.
